The dissertation operation is devoted to the solution of an improvement question an industrial crystallization of Saccharum. The mathematical model for definition of an optimum amount of the steam, entered from the outside in boiling sugar massecuite, for intensification of saccharose crystallization process in vacuum pans is developed. The computational methods of sectional uniflow - recycling cameras of a chips growth in vacuum pans of a continuous operation and the new construction of a continuous operation vacuum pan are developed. The flexible scheme with intermediate centrifuging of the last stage crystallization sugar mass immediately from a vacuum pan and homing in recycling run-off syrup, obtained at it.
