The dissertation contains theoretical and experimental researches in the field of improvement of technological level, reliability and durability of the equipment that reduces meat to fragments. Measuring of size and establishment of a role of deformations of the profound research and development of methods of acount of the intense condition of details of a complete set. The influence of thermal diffusion and also electrospark legiering on amortization resistant was examined during the experiments on special stands and on real details. The special attention in the dissertatoin is drawn to usage and realization of effect of selective carry in the design of a knife that provides increase of the time between failures of a complete set in 2...2,5 times. On the basis of the overall analysis of work of known designs, results of researches carried out and usage of achievement of friction science, the new constructive decisions that improve the work of the cutting set are offered.
