Soft ice-cream enriched by milk protein. Research of freezing process and creation of progressive equipment with improved indices of energoeconomy and ecological purity. Methods: standard and modificated, experimental. Apparatus: experimental stand, measuring instruments. The calculation of parameters of improved freezer working regime is well grounded.
