The thesis is devoted to the feasibility of a capability of efficiency increasing of food usage of grain natural resources on a base of improvement of the technology of germ selection in the flour mill plants at the grade wheat milling. The technology of selection of new kinds of food products at grade wheat milling - coarse and fine germinal products is developed. The obtained products are established to have high food value, which determines a capability of their usage in a baking industry as improvable supplements. The technology has been tested under industrial conditions
