The dissertation is devoted to refinement of the spray-drying process of dairy whey. There are mathematically describe the movement of a viscid incompressible liquid on a surface of a centrifugal conic sprayer, the modes of a pulverization by a conic sprayer with simultaneous feed of oblate stream of the heat transfer medium in the radical of a torch of a pulverization are placed. The technique of account of spraying drying installation with the combined spraying device, with a two-stage way of drying and on - zonal input of the heat transfer medium in a drying room is offered. The key words: dairy whey, spraying, cone, stream of the heat-carrier, humidity, crust, dryer, heat and mass transfer.
