The object is the plant-grinding operation of foodstuff at the nutrition enterprises; the purpose is scientific justification of the improvement of grinding operation of food raw materials and equipment for its realization at the nutrition enterprises; the novelty - definition of interdependence between structurally-operational parameters of modernized mincing-machines and both their power and technical parameters and the mast important indexes of quality of forcements; results - the package of modernised working organs for mincing-machines is developed and rational parameters of a grinding operation of food raw materials are offered; it is introduced at the nutrition enterprises; branch - mass catering.
