Object of study: The technology of spreads with new emulsifiers and builders using. Aim of investigation is to develop the science-grounded technology of spreads. Methods of study: physical - chemical methods, IR- and PMR- spectroscopy, gas-liquid chromatography, organoleptic method, and mathematical modeling method. Theoretical and practical results, novelty: Using in spreads compounding unconventional emulsifiers and builders obtained from Ukrainian raw materials were grounded. The science-grounded technology of spreads was developed. The reliability of results obtained was experimentally verified. Degree of achievements: the results are used in the educational process in the National technical university "Kharkov polytechnic institute". Using area: at project & design offices, and at the educational process.
