Essay

Object of research (investigation) are the fruits, juices, wine materials, processes of formation of quality fruit and berries wines. Purpose of researches was of learning of suitability of fruits of different sorts an apple and wild strawberry for technical processing on high-performance fruits and berries wines. The thesis elucidates the result of the researching the influence of climatic conditions on the biochemical composition of strawberry and apple fruits and the effect of some technological methods on the quality and biochemical composition of fruit and berry wines. The most influential the meteorological factors and technological methods have been established, which affect mostly the quality and biochemical composition of strawberry and apple fruits and fruit and berry wines
