The object is the processes and equipment for heat processing of foot products by IR-radiation( the aim is development effective energy- and resource-saving processes and equipment for heat processing of foot products by IR- radiation and realization of new directions in projecting highly( the methods are theoretical, mechanical, optical, physical, chemical, microbiological, organoleptic, ; the novelty are theoretical and experimental substantiation of intensification directions of heat treatment of food products by IR-irradiation( the results consist of development the combined method of heat processing of foot products and apparatus for the realization of the this method, technological process of producing meat; was inculcated at the catering enterprises; the field -food industry and catering enterprises.
