Research object: microbiological and biochemical changes in canned meat during sterilization depending on temperature - temporary factors. Research purpose: elaboration of calculated methods of veterinary - sanitary control optimization on main technological stages of sterilization of canned meat for improving the temperature-temporary regimes of sterilization. Research methods: biochemical, bacteriological, organoleptic, physical, mathematical designing. Scientific novelty: it was worked out the new scheme of optimization of veterinary-sanitary examination of canned meat, grounding upon statistic planning and analysis of laboratory examination taking into account kinetic of termic destroying of microorganisms and environment factors, which have an influence on it and the real processes of heat dissemination processes of heat dissemination. It was investigated the influence of temperature-temporary regime of sterilization on correlation facts of microbiological analysis to sterilization with calculated and real facts after it. For the first time, it was similarly examined the conformity of kinetic changes of qualimetric characteristics of canned meat. With full consideration of temperature-temporary dependence during heating and cooling in sterilization-chamber. Degree of application: the results of investigation were introduced at Ivano-Frankivsk meat-packing plant for the optimization of microbiological investigations, perfection the temperature-temporary regime of optimization the canned meat. Range of application: laboratory of veterinary-sanitary examination at enterprises which produce canned meat.
