Essay

Research object: meat and meat products, sausages, which were produced with the help of generally adopted and without nitride technology, infuzorium and laboratory animals. Research purpose: to determine veterinary-sanitary quality of meat products, which are realized at markets, and to carry out measures concerning the increase of their quality. Research methods: organoliptic, bacteriological, toxicological, chemical and mathematical. Scientific novelty: it was carried out express-method to determine toxicology, method of dyestuff production - substitute of nitrites for sausage products, complex of measures with the increase quality of meat products. Degree of application: express-method is used in work of state laboratories of veterinary medicine in Odessa region, it had been got the declared patent of Ukraine on method of dye-stuff production for sausage products. Range of application: laboratories of veterinary medicine, meatprocessing industries.
