The thesis is dedicated to a sophistication of technology food con-centrate of fast cooking for a children's and dietary feed on the basis of extrudates of cereal cultures. Is investigated processes, which one take place at interplay of extrudates of starch materials of materials with water both underlie their recovery and is uncovered features of process of their swelling. Is designed new kinds food concentrate, enriched BAS, which one have preventive operating at a lot diseases. Is investigated processes, which one take place at storage of new kinds food concentrate and usage of a polyethylene film with aseptic properties for increase of term of their storage is offered. Is designed ND, know-how have passed industrial approbation
