Essay

The object of study: the enzyme technology of fats modification. The aim of investigation is the making of the scientific proved enzyme technology of fats modification. Methods of study: pulsed NMR, gas, thin-layer and liquid chromatography, organoleptic method. Theoretical and practical results, novelty: the efficient operation conditions were determined for the action of enzymatic preparations for fats modification, the mathematical model of dependence of source component conversion degree on time during enzyme fats interesterification was elaborated, the scientific proved enzyme technology of fats modification was developed. The reliability of results obtained was experimentally verified. Degree of application: the technology was applied at Vinnitskiy and Odesskiy fat-and-oil industrial complexes. The field of application is the fat-and-oil industry.
