Chuk V. Application electrotechnology for complex processing of apple raw material

The dissertation is devoted to research of efficiency of complex processing of apple raw material are submitted by application of master schedules of pulsing electroplasmolysis of a apple tissue and electromembranous opening-up of extragent for withdraw of pectin materials from apple marc. Is rotined, that at set effective parameters of pulsing electroprocessing of apple raw material the yield of apple juice after a molding plasmolysis marc increases on 20%. Set, that usage of a modified bipolar membrane MB-3, a penetrating softened waters and improved hydrodynamic modes provides pinch of efficiency of electromembranous opening-up of extragent. The designed hardware-flow diagram of complex processing of apple raw material is injected on "Letichev-product" Ltd.
