Bogodist-Timofeeva E. THE DEVELOPMENT OF TECHNOLOGY OF SUNFLOWER OIL HYDRATION USING PHOSPHOLIPASES

The object of investigation: the technology of sunflower oil enzymatic hydration, the technology of enzymatic fats modification. The purpose of the work: to develop the technology of sunflower oil hydration and to work out the way of getting the modified phosphatide concentrate. Methods of study: thin-layer, and gas-liquid chromatography, organoleptic methods. Theoretical and practical results, novelty: the kinetic characteristics of phospholipase A1 (Lecitase Novo and Lecitase Ultra) and its selectivity as for the certain phospholipids fractions were determined; the efficient operation conditions were determined as to the action of enzymatic modifying of sunflower oil phospholipids and it is shown the possibility of using them in mayonnaise and bread production. Degree of application: the technology was tested at closed company "Pologovsky MEZ". The field of application is the fat-and-oil industry.
