Essay

Object of study: high moisture sunflower, dispersed materials, raw materials preparation to oil-treatment process flowsheet. Aim of study: development of high moisture sunflower seeds preparation sciencebased technology for processing this product on the fat-and-oil plants, based on investigation of different factors depending on such characteristics as acid value, peroxide value, oil content, bacterial pollution and seed mass temperature. Methods of study: physicochemical methods, impact nuclear magnetic resonance, derivative-graphical analysis.Theoretical, practical and actual value: the ways of systems analysis of raw materials are found, analyzed the influence of every factor on quality of sunflower seeds. Suggesting for sunflower seeds of promoted humidity to use natural dispersion minerals as preserves. Level of approbation: approbation has been carried out on the “ULEYNORD” enterprise, Otach, Oknychkiy region (Moldova). Scope of use: fat-and-oil industry.
