The thesis is devoted to the elaboration of methods improving and stabilization of flour bread-making quality on milling factories. The technologies of improving and stabilization of flour of flour bread-making quality on milling Is developed by treatment before milling and enrichment of flour with dough development modifying agents. Enrichment technology for high-grade milling with modifying agents is proposed. The developed technology has been tested under industrial conditions.
