Essay

Given dissertation paper is dedicated to optimize the process of drying kvas combined leaven on dispersing dryer with the aim of using kvas combined leaven powder for kvas production. Physical characteristics of leaven allow to analytically estimate diameter of dispersion drops. Results of experimental research of kinetics of drying a single drop of kvas combined leaven allow to design rational dispersing drying which were researched and checked on semi-industrial dispersing dryers. A technological regime of drying turned liquid combined leaven into powder and used for making kvas on “Interprodukt” of Donetsk. Mathematical dependencies as a result of analytical and experimental research are used for calculation of quality characteristics of kvas combined leaven (ferment quality, powder expiration dates and storage humidity).
