Object of research - process of freezing and long storage of fruits plums in the frozen kind; the purpose of research - improvement of technology of freezing of fruits plums by selection of optimum ways of freezing and substantiations of rational use of grades for reception of the frozen fruits with high consumer properties; methods of statistical processing of experimental data and the received dependences with use of a package of the analysis of the computer program " MS Office Excel 2003 ", laboratory methods of an estimation of qualitative changes of the product determined in state standards are used. The optimized technology plums frozen and the developed new technology the plums, frozen in a sugar syrup, provide reception of the frozen fruits plums with high consumer properties. Technologies are introduced under production conditions with positive results. Branch - branch of storage of production.
