Object - a potato of cultivars of different groups of ripe of the ukrainian and foreing selection. Methods - field, laboratory, statistical. Novelty - scientifscally proved analysis of formation of grades of a potato of domestic and foreign selection sn the time vegetation behind nutritious and technological properties for the first time is carried out, opportunity is established began of the tax of a potato for manufacturing potato products, influence of high dozes of mineral fertilizers on technological properties tubers. Are determined most ability to a storage of a grade, the temperature modes of a storage of a potato intended for manufacturing potato products are established is investigated ability to a storage of grades in conditions of increased temperature of a storage. The best domestic grades of a potato for a long storage on the food purposes and for manufacturing a semifinished item of a potato frites are determined, the economic feasibility of their manufacture, storage and processing isproved. Results - practical use in selection at creation of grades of a long storage for industrial processing, creation and cultivation of grades of universal purpose. Branch – potatoprocessing of the enterprise.
