Object of research: - technological processes of gething milk from the point of view of general microbical sowing. The purpose of research - to make the analysis of risk points during getting milk in reformed agricultural collective and individual farms accor- ding to its GMS. Working out and proposing to farms the method of lowering of bacterial sowing of milk got in different conditions. Scientific novelty of work: For the first time the extreme points of control during getting milk in in-dividual farms have been defined. Тo identify the risks during milking and keeping milk in collective and individual farms the dynamics of bacterial sow-ing of milk from the beginning till the end of tech-nological process has been also studies for the first time. And the temperature of milk while keeping it in domestic conditions. Ukraine is the first country among the countries of the UIS where the approach to the lowering of the general bacterial sowing of milk using the enzyme stabilization with the help of natri tiocianat at the expence of prolongation of its bacteriostatical period has been grounded scientific.
