The object is the technology of products from short paste with using of sunflower seed cores and processes proceeded during production and storing of new products; the goal is the development of scientific technology of products from short paste with using of sunflower seed cores; methods are standard, traditional and original; know how is the methods of sunflower cores fat stabilization using palm fat covering with addition of nature or synthetic antioxidant method; core leading into stage is set; dependence of structure-mechanical properties of short paste on it’s base receipt components is received; dependence of short cookies physic-chemical properties changing on sunflower cores content and various stages parameters, what allowed to develop new technology; it’s set up that prior processing of sunflower core prolongs the cookie storage duration in 3,6…4,0 times; industry is restaurants and confectionary industry
