Essay

The dissertation is dedicated to the development of rational tech-nology of candies with the combined corps which are formed by the method of co-extrusion. For the creation of certain structures of can-dies masses the complex mixtures of hydrocolloids have been used. The technological properties of hydrocolloids and mixtures: gelatin- k-carrageenan, LM pectin - k-carrageenan, gelatin - LM pectin have been determined. The technological regimes of preparation of the whipped masses with the use of mixture of hydrocolloids have been investigated. The regimes of preparation of candy mass on the basis of binary mixtures have been investigated. It has been installed that candies masses possess thixotropic characteristics, and at forming by the method of co-extrusion after the removal of loading their struc-ture is restored. It takes place during storage of candies with the combined corps. The compoundings, technological instructions and technical condition have been developed and confirmed.
