The evolution of the metastable states has been investigated in incommensurate phase of [N(CH3)4]2МеCl4 (Me = Cu, Zn, Fe), (CH3)3NCH2COOHCaCl2 2H2O, RbHSeO4, MgSiF6*6H2O, MgGeF6*6H2O crystals with the employment of the optical and dielectric methods. It has been shown that in the conditions of "viscous" interaction of modulated structure with defects the incommensurate phase can be considered as sequence of the metastable states divided by the transitional temperature regions. It has been found that the difference of birefringence anomalies for different directions of light propagation is affected by the phase of the order parameter along modulation axis and the incommensurability wave vector in perpendicular directions. The new state of the incommensurately modulated structure as the superposition of the few modulation waves in one crystallo-physic direction was found.
