Essay

. The thesis is devoted to enhancement of complex technology of soybean remaking with getting a biologically active adding – soybean extract and soybean milk of higher quality. It was elaborated the technology of producing of biologically active adding - soybean extract, during remaking of soybeans into soymilk by means of use preliminary water- extractive-heat treatment of soybeans. There were elaborated the optimum regimens of flowing (or circulating) extraction and dispersion of soybeans with the purpose of getting soybean extract and soybean milk of high quality. The new extractor for water-extractive-heat treatment of soybeans was designed. In the basis of the invention there are considerable simplification of design, increasing of a reliability and reduction of energy consumption.
