3. Object of research: the beef signs NOR, PSE, DFD and different extent of freshness. Purpose of research: to spend veterinary-sanitary examina-tion of beef s quality NOR, PSE, DFD during the primary processing cold storage and also stabilize and improve methods of estimation it s freshness. Methods of research: organoleptic, physical, biochemical, microscopic, bacteriological, biological, biometric. Scientific novelty: it was spent the veterinary-sanitary ex-amination of beefs quality NOR, PSE, DFD during the primary processing and cold storage and it was stabilized and it was improved methods of estimation it s freshness. Degree of introduction: these developments are used at meat-processing enterprises and state laboratories of the veteri-nary-sanitary examination on market in town of Bila Tserkva.
