Essay

Object of research: cow raw milk is, sanitary terms of its receipt. Purpose of research: improvement of veterinary and sanitary control of unboiled collapsible cow milk on microbiological indexes and perfection of methods of determination of its general bacterial contamination. Methods of research: veterinary and sanitary, microbiological, organoliptic, and biometric. Scientific novelty: in theory and experimentally grounded degree of informing of reduktaza tests from rezazurin and metilen dark blue comparatively with the method of the direct sowing in the cups of Petri at determining the gen-eral amount of microorganisms in unboiled milk. In the first time a rezazurin test was a subject of system studying depending on time and temperature of cooling of milk, the low sensitiveness of test is confirmed to maintenance in milk of coldenduring microflora. It is discovered that milk is with content ? 1 mln/sm3 microorganisms useless for storage in the frappe state, because active reproduction of coldenduring microflora draws the sharp worsening of his technological properties. The variant of estimation of reduktaza test is developed from rezazurin for determining the general amount of microorganisms in milk. Degree of introduction: the information of elaboration of using at the points purchase of milk from animals, which are kept in private subsidiary economies of people and in private subsidiary economies of people - producers of raw commodity milk Sphere (field) of using: laboratories of points of purchase of milk from cows, which are contained in the personal subsidiary economies of population, laboratory of milk remaking industry, state laboratories of veterinary and sanitary examination.
