Essay

Object of research: mussels, meat of mussels, sea water. Purpose of research: veterinary and sanitary examination of mussels, an estimation of their quality and safety during cultivation, catching, processings, storages, realizations and control system of safety in critical points. Methods of research: veterinary and sanitary, organoleptic, physical and chemical, biochemical, microbiological, biological, toxicological and biometric. Scientific novelty: complex veterinary and sanitary researches on studying parameters of quality and safety of mussels carried out, depending on a method сultivation. It is established, that mussels can be a source of infectious diseases virus etiology birds and people. The toxicological method of monitoring of safety of meat with use of an infusorian Colpoda steinii is developed. Results of researches on revealing in meat of mussels of such toxic elements as copper and zinc, makes also novelty. The veterinary and sanitary system of monitoring of safety of mussels which meat is using for the food aims. Degree of introduction: the development are using in the state laboratories of veterinary and sanitary examination in the markets of Odessa city and educational process by preparation of doctors of veterinary medicine and zooengineers at the Odessa state agrarian university. Sphere (field) of using: the state laboratories of veterinary-sanitary examination at the market, wholesale and retail trade in foodstuff.
