The thesis is dedicated to the researches of electrohydraulic procession (EHP) regimes’ influence on the changes in the parameters of juice-chopped mixture, diffusion juice, and chicory suspension. There is asserted that the action of EHP on the juice-chopped mixture allows obtaining the diffusion juice with improved qualitative indices. This would promote the extraction processes in the fields of low temperatures and allow using steam to warm the lower energetic potential. There are studied the mechanisms of structural changes in the sugar beet tissue under the different EHP regimes. There is also explained the decrease of contamination microflora content. We researched the influence of EHP regimes on chicory suspensions with the purpose to obtain the fructose and olygosaccharide mixtures. The changes in dispersion of the solid phase confirm the re-combination processes, dependently on the procession regimes. Based on the industrial tests, we worked out the construction of electrohydraulic plasmolyser, which proves the efficiency of its usage to process the juice-chopped mixture and to obtain the diffusion juice.
