Essay

Object of research: technology of interesterification of fats. A research objective: improvement of technology of interesterification of fats for reception of a product with the set fusion point and hardness. Research methods: NMR, gas chromatography, physical and chemical methods. Theoretical and practical results, novelty: the Developed technology allows to correct the formula interesterificated fat according to the set physical and chemical properties even before ester exchange, to reduce losses of the catalyst and a waste of fat at the expense of pre-award removal of free fatty acids and peroxed compound. Reliability of the received results is provided experimentally. Introduction degree: it is implanted on Zaporozhye fatfactoryUtilisation area: fat-and-oil and a confectionery industry.
