Dissertation is dedicated to the complex studies of the thermotechnological regimes of a three effect evaporating plant comprised of rotor-film evaporators equipped with spiral type rotors evaporating tomato products, along with the physically adequate of their calculations. The essence of the model creates an idea of a “conventional shear stress” on the film’s surface. As a result of the experimentation into the contents of Crimea tomato products, a method for the determination of heavy metals (lead, copper, zinc) contents with different values of dry matter in products. An analysis of the developed semi empirical mathematical model of the thermotechnological regime of the multi effect evaporator enables determination of adequate alteration of technical-economical indexes of the concentration in response to the tomato products flow rate fed into the evaporator’s first stage as well as to the heating steam consumption in the first, second and third stage of the evaporator plant.
