This study (thesis) is devoted to the substantiation of rational structurally technological parameters of sunflower-seed oil clearing processes from phosphatides for the purpose of vegetable oil hydration equipment creation. The main methods and means of vegetable oil complex clearing have been generalized in dissertation ; the review of situations has been carried out and the directions of the research have been chosen.
