Object of research: analysis of trace element deficiency and their influence on erythropoes, protein metabolism, productivity, slaughter and meat indicesbeeding up bull calves of Polissia meat and Simmental breeds. Purpose of research: study deficient trace elements (Cu, Mn, Zn, Co, Ie and Fe) and their influence on erythropoes, protein metabolism, productivity, economical ebbiciency branch, slaughter and meat indices of feeding up bull calves of Polissia meat and Simmental breeds; carry out veterinary sanitary evaluation of beef and define its biological value. Compare above indices of Polissia meat and Simmental breeds of bullcalves. Methods of research: biochemical, physical, bacteriologi-cal, organoleptic, economic. Scientific novelty: for the first time were stated optimum dozes and components correlation of mineral premixes for Polissia meat and Simmental breeds. Deficient trace elements and their methionates for correction of metabolism in the body of animals improvement of meat productivity andeconomical efficiency of the branch as to the raising and budding up of bull calves of Polissia meat and simen-tal breeds, improvement of quality and physical - chemical content of beef were economical efficiency of deficient trace elements (Cu, Mn, Zn, Co, Ie and Fe) usage in the form of methionates for feeding up of Polissia meat and Simmental breeds of bull calves was stated. There were obtained two declarational patents for useful model "Way of improvement of physical-chemical characteristics of beef" №7055 and "Way of improvement of young animals production and quality of beef under conditions of mineral substances deficiency" №10181, which emphasize scientific novelty and actuality of investigations. Degree of introduction: data are used on agricultural enter-prises of different types and educational process at the University of Veterinary Medicine and Biotechnologies named after S.Z.Gzytskyi and Sumy National Agrarian University. Sphere (field of using): meant for use by lecturers, scien-tists and students of the Faculty of Food Technologies, Biology and technology faculty and Faculty of Veterinary medicine of higher schools in Ukraine, specialists of Veterinary medicine and animal hysbandry.
