Essay

Object of research: hydrolysis and oxidizing spoilage of butter during the storage period. Purpose of research: devoted the selection of effective bioantioxidant for deceleration of oxidizing and hydrolysis processes in dairy fat and conducting the veterinary-sanitary estimation of butter with bioadditives. Methods of research: organoleptic, biochemical, microbi-ological, spectrophotometric, chromatographic, statistical. Scientific novelty: the possibility of use of phytocomplexes from natural spicеs, medical plants, cereals and some vegetables for prevention of oxidization and hydrolysis in milk fat was theoretically substantiated and experimentally proved. Veterinary-sanitary estimation of butter with bioantioxidants was conducted. It was determined that use of antioxidants of plant origin allows to slow the oxidizing processes in butter during the storage period in 3-4 times. The optimum concentrations of bioanti-oxidants which substantially do not influence on organoleptic properties of product. It's proved non-toxic and high biological value of butter with bioantioxidants. Degree of introduction: with the purpose of prevention the oxidizing and hydrolyzing spoilage of dairy butter, and also for the increase of biological value to his composition it is recommended to bring in antioxidants phytogenous among which are spices, essential and untraditional vegetable oils. For control of flowing oxidizing processes in dairy butter in their early stages, and also for confirmation of antioxidant efficiency of antioxidants it is suggested to com-plement the veterinary-sanitary estimation of the product suggested to add it with the method of determination of conjugated fat acids content. The materials of dissertation are used in educational process at ecological faculty and faculty of veterinary medicine of the Bila Tserkva National Agrarian University.
