Essay

An object is a process of opposite-flow stream homogenization of milk. A purpose is decreasing of power-consumption of process of homogenization of milk on the basis of research of process of opposite-flow stream homogenization of milk and creation of device for this realization and grounding of parameters and its modes of work. Methods: physical-chemical, mathematical statistics and planning of experiment. Results - the mathematical models of process of opposite-flow stream method homogenization of milk, in which a summarizing variable is the modified Veber’s criterion; the method of determination of quality of homogenization is grounded after a summarizing index which includes dispersion and stability of fatty phase of milk; the industrial prototype of opposite-flow stream homogenizator of milk is developed and the optimum modes and parameters of its work are grounded. A sphere of use: enterprises of processing of milk, research and project-designer establishments.
