Object of research: technology of phospholipids oil processing. The purpose of research: reception and transformation process of phospholipids oil. Methods of research: gas chromatography, infra-red spectroscopy, physical, chemical and organoleptic methods; mathematical methods to planning experiments with use of software packages MathCad and Microsoft Excel. Theoretical and practical results, novelty: new technology of receipt of high-quality phospholipids products is developed by a concentration, discolouring, fractionating of phospholipids concentrate of sunflower oil; technology of chemical modification of phospholipids concentrate is first developed with the purpose of receipt of effective surface-active substances; the simple is developed method of determination of quantitative maintenance of phospholipids in oils and phospholipids concentrate, which is based on the first set quantitative connection between the concentration of solution of phospholipids in oil and degree of discoloration at hightemperature influence on this solution; the mechanism of action of phospholipids concentrate is set as an inhibitor of oxidization of sunflower oil.
