The dissertational work is devoted to the elaboration of calculation methods for outfreezers with the horizontal crystallizer and vibrating perforation plate for the vegetable raw material extracts concentration and also the determination of the corresponding regimes of the installations exploitation. The experimental results of the outfreezing temperatures and the extracts' density in dependence of mass particle of the substances dissolved in them have been presented. The calculation equations for such temperatures and extracts' density have been also presented. The calculation methods of kinetic, constructive and technico-economical parameters of the block outfreezer of the above mentioned construction have been given. The approbation results of cryoextracts and the piloting installation, and also the results of economical calculations have been grounded by the usefulness of outfreezing installations suggested constructions at the food industry productions.
