In work the analysis of a power situation in winemaking is carried out, the general ways of increase of power efficiency of winemaking in the conditions of power supply globalization are proved. Power-intensive objects of manufacture are defined, it is offered an experimentally-settlement method of researches of their power position. The mathematical models of interaction of streams of wine and carbonic acid are developed in a stream absorber. The differential equations are taken the methods of theory of similarity to the model in the generalized variables.
