The Object: process of the making the sorting and processing the sorting AU, features and factors quality main component these processes. The Purpose: theoretical and ex-perimental determination of the conditions of the processes of the preparation of the sort-ing and its processing active coal (AC) that provide the stable quality of vodka. The Methods: theoretical - an analysis and syntheses, modeling, accounting; experimental - physical, chemical, methods gas and liquid chromatography; the organoleptic; the mathematician-statistical - a planning the experiment, processing result experiment, checking the statistical hypothesises; the kvalimetic. It Is Offered: methods of the calcula-tion and heel optimum proportion technological water, for preparation of vodka, depend-ing on the contents (demineralized: softened) and micro-element of the composition; de-signed methodical questions of the complex estimation quality initial, intermediate and final products of the vodka production process; compounding onnew type of the prod-uct - vodka "Respekt", and technological instruction on vodka "Respekt". The Sphere of the use: liquor-vodka' enterprise and high schools.
