Essay

The issues of dissertation are devoted to a scientific grounds of the technology of dried adapted mixtures with hydrolyzed proteins for children's dietotherapy. It is established, that using of hydrolyzed proteins at making hypoallergenic products are available and practical. The rational procedures of the protein's enzymic hydrolysis with specified degree of hydrolysis are defined. The efficiency of using a method of discrete and pulse energy imput in the rotor-pulse apparatus at homogenization of polyphase mediums is confirmed experimentally.
