This thesis is devoted to improvement of mini-breweries' apparatus fitting out that makes possible to increase efficiency of activity of middle sized productions. A combined wort brewing apparatus for boiling of beer wort with hop and for further defecation of the wort is developed and processes that are proceeding in the apparatus are studied. Barley malt extract is used as a main raw material. On basis of experiments physical and thermophysical characteristics of beer wort are defined and stated in the thesis. The obtained results are used during receiving of criterial equation of heat exchange process in the wort brewing apparatus. Processes of heat emission and separation of hop components from hot protein deposit are experimentally explored. A mathematical model of deposits separation process is created. Rational constructive and mode parameters of combined wort brewing apparatus functioning are defined.
