The dissertation is devoted to the improvement of primary processing technology and storing of home varieties mustard seeds, which allows to lower power inputs and to preserve the quality as spicy crop during at processing, and also guarantees their effective storage. Conformity to laws of dependence of mustard seeds quality indicators of from primary pre-processing and storage conditions are established. Recommendations on mustard seeds refinement, drying and storage are given. Results of work are tested in industrial conditions and recommended for introduction on grain purveyance enterprises.
