The thesis has dealt with the research and study of theoretical and tutorial principles of development of food industry enterprises on the basis of consumer demand creation. The classification signs have been determined and the classification of factors of influence on the want formation and consumer demand have been suggested basing on the generalization of existing methodological approaches regarding the factors of influence on the shaping of consumer demand and individual consumption. The influence of consumer demand on the development of an enterprise has been studied and researched. The current trends and problems of development of enterprises have been determined based on the formation of consumer demand. The methodological approach to create a marketing strategy of development of enterprises has been suggested on the basis of creation of consumer demand. The principal stages of development forecasting of foodstuff market have been determined. The optimizing economic and mathematical pattern of enterprises development options choice has been developed and approved with due regard to the forecast of demand for product and investment restrictions on increase of assets of enterprises.
