The Object: The confectionery mass plastification process. The Purpose: To develop of models confectionery mass plastification process, substantion rational parameters of plastification process and requirements to modernization of constructions of oil-cutting machine and mixer of VV-PML plastisizer. The Methods: A mathematical modelling of mechanical processes of growing, stirring and aeration confectionery mass, computer simulation of heat processes and hydromechanical processes of confectionery mass flow, methods of optimization. Experimental data were processed by the methods of mathematical statistics. It is Offered: typical models of confectionery mass plastification process and recommendation to his improvement and modernization of equipment. The Sphere of the use: enterprises that develop technological equipment for confectionery processing industries, educational institutions.
