3. Dissertation is devoted to receiption technology development of protein-polysaccharide complex with antiproteolytic activity. Considerable attention is paid in full characterization of trypsin inhibitor isolated from the seeds of alfalfa: composition and phisico-chemical property characteristic, determination of casein hydrolysis kinetic parameters in the presence of trypsin inhibitor from alfalfa seed; study of the conditions of рrotein-polysaccharide complex immobilization and characterization. The producing technology of protein-polysaccharide complex with antiproteolytic activity was developed and economically grounded.
