Essay

The thesis is devouted to the scientific reasoning and development of the technology of obtaining the lycopene containing preparation by the method of enzymatic degradation. The investigation of the process of enzymatic hydrolysis of tomato biopolymers showed that the application of the preparation Cellulase-100 and Pectophoetidine - P10x makes it possible to increase the output of lycopene to 262 mg per 100g. The optimum correlation of preparations Cellulase-100 and Pectophoetidine - P10x 0.4 units/g : 3.9 units/g.
