Dissertation is devoted to development scientifically methodical bases and practical recommendations realization of which will enable to promote profitability of enterprises of bake industry. The conceptual going is exposed near essence of concepts of income and profitability of enterprise. Classification signs, kinds, values and descriptions of income, are systematized. Principles and methods of determination of profitability of enterprises are specified. The characteristic features of the methodical going are considered near determination of indexes of profitability and profitability. Virobniche-komertsiynoy performance of enterprises of bake industry indicators are analysed. The evaluation of their indexes of charges, income, profitability, profitability is carried out. Directions of increase of profitability are offered with the use of antiinertia factor model of development. Grounded antiinertia method of prognostication of economic indicators, in particular to profitability. On the basis of antiinertia methodical approach the prognosis of gross receipt, net profit and unit cost is developed on the analyzable enterprises of industry on 2009-2013, and the conducted prognosis of composition of variable charges of bake enterprises. With the use of the specified ambivalent model the prognosis of indexes of production of types of bake is developed, that have maximal demand in a population.
