Essay

Dissertation is sanctified to dedicateв еру research of equipment for the concentra-tion of food liquids. It is shown that the method of sectional freezing with lamellar crystal-lizers is the most effective for apparatuses vehicles of the large productivity. The ob-tained experimental results were presented in a summarizing kind in the form of criterion equation of dependence of the number of convective Sh mass shift from the relation of thermal stream under the action of Archimedes force of Ra diffusive - viscosity number of Sc, thermophysical parameters - number of Pr. Methodology of calculation of apparatuses for low temperature concentration of food liquids by the method of sectional freezing on lamellar crystallizers.
