The thesis is devoted to the improvement of processes pasteurisation and sterilization processing of food products and beverages. The effect of the ratio of geometric parameters of packages on the specific surface as a factor in heat transfer. The mathematical models of intensification of heat and mass transfer of products in sealed containers, including through a combination of potential fields of the gravitational forces and inertia forces.
