The thesis is devoted to studying of self-organization processes and influence of organic solvents of different nature on the water state in the internal bone cavities of nanoscale materials and the development based on nanodispersed hydroxyapatite and proteins (gelatin, albumin) material as close to natural bone in its hydrate characteristics. The method of 1H NMR-spectroscopy with layer-freezing liquid phase showed that about half the water in a healthy human bone tissue is in the unusual, weakly assotiated state. Biocompatible nanocomposite obtained through hydroxyapatite, gelatin and human serum albumin, with structural and energy parameters of hydrate layer, close to natural bone tissue. It was shown that the presence of organic molecules (chloroform, acetonitrile and DMSO) affect the structural characteristics of water in the nanosize space of composite material, exactly weakly polar molecules stabilized weakly assotiated form of water. The mathematical model of hydroxyapatite crystal growth kinetics, which enables us to analyze the effect of changing concentration of initial reagents and the synthesis temperature on particle sizes.
